Vilnius has
hosted the Baltics first Pink Soup Fest to celebrate Lithuanian’s beloved cold
beetroot soup.
The festival took place in the heart of the capital city.
While beetroot soup is beloved in many eastern European nations, Lithuania lays claim to Saltibarsciai — made of kefir, cucumbers, beetroot, and dill — eaten cold and a favorite on a hot summer's day.
"It's not just soup – it's a way of life," said the city's tourism agency Go Vilnius, which organized the inaugural festival in its honor. French student Victor Delcroix came dressed as a bowl of "Pink Soup."
"I fell in love with Saltibarsciai and I felt obliged to wear this to honor it," he said before jumping on a giant pink slip-and-slide covered in foam.

Cold soup with boiled beetroot, eggs and fresh cucumber. Add cream and kefir and serve chilled - a favourite with our Lithuanian neighbours!
Ingredients for 6 servings
2 beetroot
3 potatoes
2 cucumbers
2 eggs
Salt, pepper
Fresh dill
250 g cream
1 l kefir
Preparation
Total time: 40 minutes
Boil the beetroot and potatoes with all the peel, as well as the eggs. Peel the beetroot, cut into cubes or grate.
Peel and dice the potatoes. Dice the eggs. Cut the cucumbers finely.
Mix all ingredients, add salt, finely chopped dill. Add cream, kefir. Serve cold!
