A very refreshing and delicious compote recipe. But if you add a little alcohol, you get a real Latvian mojito!
Ingredients
350 g gooseberries
1 cup sugar
Lemon, lime or citric acid - 2 pieces
Peppermint
Preparation
Rinse the gooseberries, wash them. The tails can be removed.
In a clean three-litre jar, put the gooseberries, 3-5 large mint sprigs and two lemon slices.
Lime can be used instead of lemon, but 1 teaspoon of citric acid will do if you don't have any on hand.
Fill the jar to the top with boiling water. Put the lid on and leave to cool for 15-20 minutes.
The water is then poured into a saucepan and brought to the boil.
Add 1 cup of sugar to the jar. When the water has boiled, pour boiling water over the top again and cover.
Wrap the finished compote in a blanket for 2 days.
